BBQ Pasta Melt (aka lazy tea)

There are some days when even cooking a chicken breast feels like too much effort. This meal was created on one of those days.

The joy of owning a food processor with a grater attachment means this meal was really very, very easy. But it also tasted very, very good. And a lot more sinful than it actually is, being actually Syn-free depending on your choice of supermarket.

Ideally you should serve this with lots of speed food, e.g. salad. But since it was a lazy tea I just ate an apple whilst cooking…

Serves 4

Syn Free if using Syn-free BBQ chicken slices and the cheese as your Healthy Extra A (Otherwise 6 Syns for cheese and the Syns from your chicken slices, divided by 4 portions)

Ingredients

  • 500g dried pasta
  • Frylight
  • 4 smoked bacon medallions, cut into strips
  • 200g chestnut mushrooms, sliced
  • 1 onion, grated
  • 2 carrots, grated
  • 1 courgette, grated
  • 400g chopped tomatoes
  • 500g passata
  • 1 tbsp garlic granules
  • 1 tbsp smoked paprika
  • 2 tbsp balsamic vinegar
  • 2 tbsp sweetener
  • 1 pack BBQ chicken slices (I used Sainsbury’s for ½ Syn)
  • 1 pack smoked ham, thinly sliced (I used Brunswick)
  • 160g grated light cheddar

Method

  1. Cook the pasta in plenty of salted boiling water
  2. Spray a large saucepan with frylight and fry off the bacon, onion and mushrooms
  3. Add the grated carrot and courgette and turn the heat down. Cook for 5 minutes, stirring occasionally
  4. Add the chopped tomatoes, passata, garlic granules, smoked paprika, balsamic vinegar and sweetener and mix well. Cook for a further 5 minutes
  5. Add the BBQ chicken slices and ham, mix well and reduce for a few minutes before turning the heat off
  6. Drain the pasta and add to the sauce
  7. Mix together, pour into a lasagne dish and top with the grated cheddar
  8. Grill on a high heat for approx 8 mins or until the cheese is melted and golden on top
